This recipe is so simple but it's incredibly delicious. The richness of the avocado paired with the tangy parmesan and tart crunch of the pomegranate seeds is exquisite. If you're hosting any holiday parties and need a side dish to impress but that takes no time at all to prepare, this salad is the perfect choice. Yesterday's post was about winter chill and a simple recipe to guard against it. This post is somewhat similar, with the help of a marshmallows! I have been so busy that I haven't really gotten into the Christmas season in terms of decor ideas here on PGM - I apologize for that. However, perhaps I can entice you with food treats instead - perhaps it's my pregnancy, scratch that, I'm sure it's my pregnancy, but home baking is what I'm craving for the holidays this year. The snow has been falling off and on for the past few weeks now. It's not here to stay, not quite yet, but still it has me yearning for wholesome, winter food. This recipe is a true reflection of how Jonathan and I cook, much of the time. I have an idea, he helps me tweak it, and together we create something yummy! This soup is just a mix of ingredients, a basic tomato and vegetable variety, with a few added spices - the recipe isn't meant to be followed to the letter. This is probably one of my favourite Organic Kitchen recipes to date (just ask Erin, the photographer)—Jonathan made it again for friends this past weekend and I was reminded of just how good it is, so I thought I would share it again here (and that same friend requested the recipe, so here it is Kelly!). Making your own refried beans is surprisingly easy, just don't walk away from the pan while cooking. It has a nasty habit of exploding all over the stove-top if it's overheated, so just be patient and stir away. You can cook the refried beans ahead of time so when it comes to serve this dish all you have to do is assemble and bake.
