INSIDE VOLUME 4 WE HAD THE OPPORTUNITY TO BE AMONG THE FIRST TO TASTE THE SPIRITS CREATED BY DILLON'S SMALL BATCH DISTILLERS, a brand new craft distillery located in Ontario's Niagara region, a place well known to wine, beer and spirits enthusiasts around the world. The experience was delightful and it was clear from the start that Dillon's dedication to honest ingredients, meaning that transparency in their process is of paramount importance, is a recipe for instant success. We were smitten from the start by their committment to using natural, local and real ingredients and fragrant botanicals, mixed with sustainable practices and fabulous branding and design. Each bottle goes so far as to list exactly where the ingredients come from, a transparency sorely lacking in much of today's market. As part of the interview, PGM Food Editor and Chef Jonathan MacKay created a cocktail guide of five delectable drinks, perfect for any time of year. The above photos are unpublished shots from that shoot. At the time of the shoot, Dillon's wasn't quite open for business, but they've been causing quite a stir since then. We thought it would be fun to share photos of the finished space and their tasting room now that it's finished and gorgeous!

Finally, the still at Dillon's is a thing of beauty—it's copper drum shines brightly like a new penny and the cacophony of tubes, dials and vials is like a scene from Willy Wonka. It's a fascinating process to be certain! Here are a few more unpublished photos from our shoot:
