Organic Kitchen - Homemade Seasoning Salt

In the new issue of Pure Green, Volume 4, which readers and stores should be receiving this week, we included a recipe for homemade Pierogies. I kid you not, this is probably one of my favourite Organic Kitchen creations. It's a no-fail crowd-pleaser, worth the effort a million times over, and the best part is that it's made to go in the freezer and pull out when you need it. Of course, you can season Pierogies any way you like, but we suggest you serve them with a savoury sweet combination of seasoning salt, rosemary and maple syrup. Seasoning salt can be store bought at any grocer, but it's nice to make your own too. Here's how to do that:

SEASONING SALT

Ingredients:

  • 2 medium cloves of garlic            
  • ½ tsp. paprika                   
  • ½ tsp of dry chili flakes
  • ½ tsp. of dry oregano or 1/8 of finely chopped fresh       
  • 3 tbsp. coarse organic mineral salt

Method:

Add all ingredients in a mortar and pestle and grind together to make an even mixture.  The garlic will make the mixture slightly paste-like.

Spread the mixture out on a baking sheet and pop in the oven on high heat for a few minutes to toast the mixture.  Be sure to watch it doesn’t burn.  Once toasted and dry return to the mortar and pestle and grind the mixture up into a salt-like consistency.
